The restaurant located on Hilltop Drive, in the Best Western Plus Hilltop Inn was established in 1981 as C.R. Gibbs Alehouse and Restaurant. As fate would have it in 1999, the partnership headed by local businessmen Steve Gaines and Ed Rullman took the popular Redding establishment and transformed it into C.R. Gibbs American Grille, adding a patio and a new look that became an instant success.
“The birth of C.R. Gibbs American Grille was a dream come true” says Rullman, “people thought we were crazy, but we gave the community something that was a unique experience in dining. Gaines whose parents started the motel and restaurant back in 1977 adds “We would do it all over again!! My Mom and Dad would be very proud of what we have accomplished here.”
And do it all again they did! Completing a massive remodel in January of 2019 opening up the restaurant more than ever, creating an inviting vibe with new communal butcher block bar seating, intimate banquettes and a nod to the history of the surrounding areas. In the design, all while maintaining a classy & comfortable space to enjoy.
Over the years many people have gotten their start here at C.R. Gibbs. Kids in high school with that first job earned gas money, some worked their way through college, and several became managers working here for 20 years raising their families… others just moved on. There have been some that became teachers, lawyers, firemen, police officers and business owners. Many come back as customers, some return for a second or third stint as an employee, because they enjoy the culture. Second and third generations are starting to appear filling the shoes where their parents and grandparents once stood.
